Red Velvet Cookies with White Chocolate Chunks


Can you tell that I have been salivating over sweets lately? Or, that I am a true sucker for red velvet. I am not a huge chocolate cake fan, but there is just something about the red velvet that I adore. Maybe because the chocolate taste is not overwhelming. Half of my wedding cake was red velvet, and it is funny because, before I met my husband, I had never really had it before. I am from the West coast, and back in the day, before it blew up in popularity across the country, it wasn't really a popular choice where I am from. Now, I want everything red velvet, and I know you do too. 

I love this recipe because it is from a box, and you just need to add a couple of ingredients to make them into cookies. I might add some extra white chocolate chunks though. 

Red Velvet Cookies with White Chocolate Chunks

1 box of Red Velvet Cake Mix
1 cup of All-Purpose Flour
2 sticks of softened butter
1 egg
2 cups of White Chocolate Chunks or chips

Preheat oven to 350 degrees. In a mixing bowl, add butter and mix until soft and fluffy. Slowly add cake mix and flour. Once combined, add egg and mix completely. Add white chocolate chunks, and mix for a minute or so until well combined. Form dough into one inch balls, and place into the oven for 8-10 minutes. Yields about 24 small cookies.

There is something wrong with this recipe. There is too much dry ingredients and it is not holding together. Not sure what's going on? The cookies pictured look beautiful though. I've found a similar recipe online that calls for 2 eggs and oil instead of the butter and NO extra flour is listed. I don't see any feedback on this recipe, has anyone else had luck? Am I doing something wrong?

Try clicking on the Whipperberry link just below the recipe. There are a few comments on there about how the recipe turned out. They are also saying it is a bit dry, but they have some solutions for ya. I hope that helps. I have not had a chance to make them yet. Let me know. :)

The mix was wayyy too dry, so I added another egg, and then, like, another cup and a half of flour. Turned out great!
