It is hot, and it is a hot summer. When it is this hot, the last thing that I want to eat is something filling and heavy. I just feel gross, and that doesn't sound good. I already don't eat as much in the summer, which is good for my waistline, but I also want to eat something refreshing and delish. You don't want to go this summer without trying this recipe. So good, so refreshing and low cal!
1 lb tomatoes, cut into chunks
1 cucumber, peeled and cut into chunks
3 cups cubed seedless watermelon
1 jalapeno pepper, seeded and minced
2 Tbsp chopped fresh basil
1/2 tsp. salt
Set aside 1 c tomato and 1/3 of cucumber and set aside.
Puree the rest of the tomato's and cucumber with watermelon in food processor or blender. Pour into bowl. Stir in remaining ingredients. Cover and chill at least 3 hours or up to 24 hours.
Sprinkle with chopped basil
