Gotta love a little sugar in the morning. Probably want to wait till the weekend to make these for the kiddies. It is actually not too bad, just regular pancakes with a little cocoa added. I have to say you shouldn’t omit the caramel glaze because I may be biased, but that is the best part. Thanks to Nesting Project for her picture and pancake recipe. I used my own caramel sauce recipe because it is super duper easy. I would love to have made these and posted my own pics, but it doesn’t really fit into the whole diet (avoid these 4 diet mistakes) thang. I would drink that caramel!
Chocolate Pancakes:
1/3 cup cocoa
1 cup all purpose flour
2/3 cup sugar
1 large egg
1 cup milk
1 tsp vanilla
1 1/2 tsp baking powder
1/4 tsp salt
4 tsp melted butter
Combine all dry ingredients together. Add wet ingredients including melted butter and wisk together. Cook pancakes on a griddle or frying pan with 1 tbsp of oil.
Caramel Glaze
1 cup brown sugar
1/2 cup butter
1/2 cup cream
2 tsp vanilla
Combine all ingredients but vanilla in a medium saucepan. Bring to a boil over medium heat, stirring constantly. Boil for 2 minutes. Add vanilla. Let cool for a few minutes. Serve warm.
