This is the time of year to pull out this recipe. Parties, get together's, holidays and even if you just want to make this heavenly drink and sit with a good book. You really can't go wrong with this recipe. The mix is easy to make and freeze for another time if you don't use all of the mixture. In fact, I would recommend doubling this recipe and keeping it in the freezer for easy access in case you have unexpected company or you just want to make one cup.
Ingredients
1 ounce dark rum
1/2 cup boiling water
1 heaping tablespoon hot buttered rum mixture (recipe follows)
dash cinnamon
dash nutmeg
Hot Buttered Rum Mixture
2 cups brown sugar
2 sticks butter, room temperature
2 cups good-quality vanilla ice cream, melted
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
Directions to make drink
1. Combine the rum, boiling water and hot buttered rum mixture in a heat-resistant glass. Stir well.
2. Sprinkle with nutmeg and cinnamon and serve immediately.
Hot Buttered Rum Mixture Directions
1. Place the sugar, butter, ice cream, cinnamon, and nutmeg in your food processor and blitz until smooth.
2. If you are not using all of the mixture at one time you can freeze it. Place the hot buttered rum mixture in a container and freeze. It will not hard freeze, and is easily accessed when preparing the drink.
