Let me just start off by saying that these apples are not just any apples, but fried in a pan with glorious butter and sugar and goodness and I’m sure a little love as your drooling over the aroma.

Caramel Apple Pancakes
Ingredients
- 1 cup all purpose flour
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup buttermilk (or 3/4 cup regular milk plus 2 tablespoons vinegar – let sit for 5 minutes)
- 1 teaspoon vanilla
- 1 egg
- 2 tablespoons butter, melted
- 1 medium tart apple, peeled and diced
- 2 tablespoons butter
- 1 tablespoon brown sugar
- 1/2 teaspoon cinnamon
- tiny pinch of salt
