TGIF! A fabulous holiday happens to fall on this day. National Margarita day. I wanted to offer something a little different than a regular margarita. Why not a margarita popsicle recipe to boot? My thoughts are with spring and summer. Especially since it snowed in Phoenix here two days ago. I’m ready for bbq’s and popsicles a little tequila would be the cherry on top.
This recipe is a yummy homemade margarita popsicle recipe, but I also have a second really easy recipe if you want the same effect, but don’t have time make the homemade ones and wait for them to freeze. Just buy some lime flavored popsicles, or fruit bars and pour a mixture of tequila and lime juice over them. Dip 1 edge of the pop into some kosher salt.
Here is the homemade recipe, my mouth is already drooling. Spring, where are you already? I’m freezing and I live in AZ!
Ingredients:
3/4 cup sugar
3/4 cup fresh lime juice
1/2 cup water
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
2 tablespoons tequila
2 tablespoons orange liqueur (Grand Marnier)
Kosher salt, for garnish
4 Dixie cups
4 popsicle sticks
Directions:
Combine sugar, lime juice, water, lemon juice and orange juice in a small saucepan over medium heat. Stir, until sugar dissolves. Remove from heat and allow to cool. Once cool transfer to a blender with tequila, orange liqueur, and lime wedge and process until smooth. Pour into the cups and cover the top of each cup with foil. Place the popsicle stick in center of cup (down through foil, which will hold it in place). Freeze until hard, preferably overnight. Remove from freezer and run cup under warm water to loosen popsicle. Garnish with kosher salt and serve. Enjoy!
