3 Unique Snacks For Your Kids

I had some left over celery sticks from last night’s dinner of “wing fest” with my husband. (I lost paper, rock, scissors.) So, being left alone tonight I decided to indulge in a dinner by myself of “ants on a log” and orange soda. I have not had this treat in so many years that it was very nostalgic. If you are not familiar with ants on a log it consists of celery sticks, peanut butter and raisens (the ants of course.) That got me thinking. I sometimes watch some of my friends children, and wanting to be the “cool aunt” I wanted to find some tasty and healthy snacks for the kiddies.

Peanut Butter Balls

Ingredients:

  • 1 small banana
  • 1/2 cup chunky peanut butter
  • 1/2 cup toasted wheat germ
  • Finely chopped peanuts, mini chocolate chips, shredded coconut.

Directions:
Mash banana, peanut butter, wheat germ together. Take a tablespoon of the mixture and roll into balls and roll into coating. Chill until firm. Makes 14 balls.

 Variation: For a peanut-free version, substitute sunflower-seed or soy-nut butter for the peanut butter, and omit the peanuts and chocolate chips (which can contain traces of peanut.)

Mexican Fiesta


Ingredients:
6 cups popped unsalted popcorn
3 cups corn cereal
1 cup mini pretzels
2 tbsp butter melted
3 tsp dry taco seasoning
2 tbsp shredded Parmesan cheese
1/2 cup cheddar cheese cut into 1/2 inch cubes.

Directions:
Mix popcorn, pretzels, cereal into medium bowl. Mix butter and taco seasoning mix and pour over popcorn mix. Toss in cheeses to coat. Keep in air tight containers to keep fresh.

Pink Pinwheels


Ingredients

  •  2 (8-10-inch) flour tortillas
  • 1 (8 ounce) package of cream cheese, room temperature
  • ½ cup seedless strawberry jam (or other flavor of your chose)

Directions:

Spread cream cheese then jam onto both of the tortillas. Roll each tortilla into a log and place into the refrigerator for a minimum 15 min. Once the rolls are firm cut into a total of 16 pieces with a sharp or serrated knife.
