So it’s hot. I know, I know. I’m sure you are so sick of reading that in my posts. My best friend is sick of my complaining and it is only the beginning of June. “You need to leave Phoenix!” is what she says and I’m sure it is what you’re thinking too. Well, it’s a little more complicated than that. Hubs still in school and we own a home that is upside down. So with all of that, and the heat, I think I need a cocktail.
Since today is officially National Ice Cream day, I think it would be in my best interest to combine the two into a cool, refreshing and decadent treat. It is close enough to Friday, and I think if you made it this weekend, it will still count that you are celebrating this important national day.

The Cherry Fizz Cocktail
1 scoop vanilla or strawberry ice cream
1/2 cup fresh cherry juice
1/2 cup prosecco or moscato wine.
Add the vanilla ice cream to a tall glass.
Top with the prosecco and cherry juice.
I was just going to do one ice cream cocktail, but two is better than one!

1 scoop mint chocolate chip ice cream
1/2 sparkling water
2 ounces vodka.
Stir the vodka and sparkling water together, add the mint ice cream and serve!
