Today, my husband and I are celebrating our third anniversary. Where has the time gone? I can’t believe it has already been three years! On a whim, literally, we decided to head down to Vegas and have a little early celebration. The hubs was already there with some friends, so when the guys were getting ready to head back, I thought it would be fun to meet him there.
We stayed at the Encore hotel resort, and it was seriously amazing! The hotel room was fabulous and not to mention the view. The food was great and so was the service. I have never stayed at the Wynn or Encore before, and now I feel totally spoiled, but I don’t think I could stay anywhere else!

All our food shots. I tried to stick with salads, to stay on my diet (avoid these 4 diet mistakes). It is hard to diet (avoid these 4 diet mistakes) on vacation, but I did my best! Fish and salads, still, so so delicious. Especially in a place like Vegas.
Those are sugar coated beignets filled with marshmallows. Yes, as good as you would think they would be.
