Chicken Fajita Lettuce Bowls

I have been on a weight loss (new science-backed research) journey for a few months now, and I am always on the lookout for some yummy but healthy recipes.
 
If you’ve been on any kind of healthy regimen, you know that after awhile, the same old meals and recipes get so boring and it can be easy to fall off your diet (avoid these 4 diet mistakes) because you just want to eat something different.
 
Recipes that keep me interested and feeling good on the inside (and outside, right around the waistline area) are what I’m eating and making.
 
With my weight loss journey (what I recommend) I have also learned that sometimes making a healthy meal can be very time-consuming and I end up spending many hours trying to get something made for dinner that is also healthy.
 
It seems so much easier to throw together items that are not good for your body, not to mention the convenience of running out and grabbing some fast food. Luckily, I have discovered some healthy foods that help cut my time in the kitchen to fractions, keep my waistline in check, and are also delicious so I don’t feel deprived.
 
Mexican food; it is my absolute favorite food. I could eat any kind of Mexican food in the morning, noon, and night every single day.  However, it is not the most diet-friendly.
 
I have had to make some adjustments to my favorite recipe, chicken fajitas.  This health-conscious recipe is absolutely one of my go-to things to make when I am really craving Mexican food and it is only 250 calories per serving and each serving is two lettuce bowls. You won’t leave the table hungry.
 
 
I couldn’t do it alone, of course. Thanks to the help of Tyson® Grilled & Ready® chicken that is already fully cooked, 98% fat free and has no preservatives! It is a perfect addition to my healthy chicken fajita lettuce bowls. I actually purchased Southwestern Tyson® Grilled & Ready® which was the perfect seasoning to my fajitas.
 
 

Ingredients: Serves 2

12 oz Tyson® Grilled & Ready® chicken strips
1 red bell pepper, cut into strips
1 green pepper, cut into strips
1 medium onion, cut into strips
2 cloves garlic minced
1/2 lime juice
1 tsp ground cumin
1 tsp garlic powder
1/2 tsp. taco seasoning
salt and pepper to taste
1/2 tbsp olive oil
1 head iceberg lettuce

Garnish:
Salsa or pico de gallo
1/2 avocado
Cilantro
lime

Optional garnish: (adds additional calories)
1/2 cup reduced fat shredded mexican cheese
reduced fat sour cream
guacamole

1. In a saucepan, heat 1/2 tbsp oil over medium. Add garlic and cook until lightly browned. Remove from heat. Stir in lime juice. Let it heat for about 30 seconds, add vegetables and Tyson chicken strips and stir until veggies are tender, about 4 – 6 minutes. While your veggies and chicken is cooking, add cumin, garlic, taco seasoning, salt and pepper.

2. To make the lettuce wraps, Cut off the stem (or base) of the lettuce head, and cut in half long ways. Peel off individual leaves, and wash and pat dry.
