I don’t keep a lot of sweets in my house. But there have been too many times that I have had a craving for something sweet, an end up in disappointed because store bought treats are always not that good, and then not worth the calories. I don’t want to bake something because then it is around the house for days to help me stay off my diet (avoid these 4 diet mistakes).
I came across this mug cake recipe for 1 and wanted to try it. Believe me, I was very skeptical that a cake would taste good in the microwave. I have to say, I was pleasantly surprised. Once I got the cake out of the mug I cut it into pieces, added some ice cream and sprinkled powered sugar on top. It was tasty, moist and got rid of my chocolate craving. It was just enough.
- 3 tablespoons unsweetened cocoa
- 3 tablespoons sugar
- 1 tablespoon flour
- 3 tablespoons milk
- 3 tablespoons vegetable oil
- 2 egg whites
- 1/4 teaspoon vanilla
- 1 tbl chocolate chips
Mix dry ingredients together. Add in wet ingredients and mix for 3 minutes until all ingredients incorporated together. Add chocolate chips on top. Bake in microwave for 2 1/2 – 3 min. Check with a knife after 2 1/2 minutes to make sure it is cooked at the bottom and if not cook for another 30 seconds.

I’ve always wanted to try making cupcakes in a jar – but this is even better since I’ve already got the mugs – looks like a great way to have your cake and eat it, too – without eating the whole cake!

So true! Sometimes I just want a little snack, but not be tempted to eat it all week because it is just enough. The best part? It only takes 5 minutes!
