If you don’t know what to make tonight to commemorate Cinco de Mayo, then these are the recipe’s for you. It is easy, and you won’t be disappointed, all while celebrating.
Black Bean Dip
Black Bean Dip
2 cans (15.5 oz. each) black beans
1/2 cup chopped red onions
1 can Rotel tomatoes with green chilies
1/3 cup fresh chopped cilantro
3 Tbs fresh lime juice
2 tsp. chopped, seeded jalapeño peppers
1 tsp. salt
In a food processor or blender, pulse all ingredients until smooth. Spoon into a serving bowl. Serve with tortilla chips.
Homemade Beef Tacos
Brown your ground beef with taco seasonings.
To fry the tacos, heat your oil (vegetable or canola) about an inch high, in a skillet over med-high heat. Add your meat in the middle of the tortilla and fold in half. Use your tongs to hold taco shut and carefully lay down on one side, into the oil. Use the tongs to hold the top down for a few seconds until it sets. Turn taco after about 45- 60 seconds, or until golden brown.
Drain tacos as much as you can when taking out of oil, then lay on paper towels to drain.
Add your fixings and enjoy. I had never made these before and they are so delish. Be careful with the oil, it does pop and I did get a little burn. So be cautious!
If I had remembered, I would have loved some guacamole and salsa. But really, these were so good, I didn’t miss them too much.
