Happy first day of summer! Summer solstice, the longest day of the year. And with that, brought a heat wave all over the country. So why don’t we BBQ? Get out of that kitchen! Who wants to turn the oven on right about now anyhow? If it’s too hot to bbq for you, then I think this would also taste good if this meal was grilled on in indoor grill like a George Foreman grill, or any other type you may have. It is simple to make, easy clean up and so, so good. We also grilled up some corn with this and had some potato salad. This is so perfect for a summertime, easy, weeknight meal.
My husband and I loved this marinade/sauce. We can’t wait to try it on some chicken next time. I went for the boneless pork chops because I don’t like hassling with the bone-in pork chops, but you can do whichever you like.
Honey Garlic Pork Chops
Ingredients:
1 cup ketchup
1/3 cup honey
1/4 cup soy sauce
3 garlic cloves (halved)
1 1/2lbs boneless pork chops (3 6 oz. portions)
1/2 tsp. salt
1/2 tsp. pepper
Dash or two of garlic powder
Pinch red pepper flakes
In a medium bowl or dish, stir together ketchup, honey, soy sauce and garlic and seasonings. Add the meat and let marinade for a few hours, or overnight.
Grease the grill grates of an outdoor grill and heat the grill to medium-high heat. Place pork chops onto the grill, and cook (while basting with the sauce often) for about 5 minutes on each side or until the meat is cooked through (the internal temperature has reached 145 degrees).
