It’s official, across the country it was the hottest summer on record. Thankfully for some of us it has cooled down a bit and it is already almost Labor Day. We only have a few weeks left of summer and this cocktail has summer-loving written all over it. Time to take advantage of the rest of the summer evenings with friends and family. This cocktail would also be a perfect dessert cocktail after a fun BBQ.
If you are trying to find a fun and super easy cocktail to make, then look no further. This drink is refreshing, and delightful. It would be perfect on a warm day or evening if you want to do something different.
Sparkling Lemon Sorbet Cocktail
- 1 pint lemon sorbet – Haagen-Dazs has a great one.
- 3 oz. or 2 shots of vodka. (I suggest lemon or citrus vodka. That would be delish.)
- Sparkling wine.
In a blender, blend the vodka and sorbet until it is a desired consistency. Will be pretty thick. Pour into martini glasses and pour the sparkling wine on top.
Makes 2 servings.
