When Girl Meets 30

Ice Cream Snickers Pie

August 29, 2012 By Erin Kennedy 1 Comment

It was my cute hubby’s birthday over the weekend and I wanted to make it special for him because he was turning 35! The poor guy had to work all day on his birthday and so I wanted to make him something that he could enjoy when he got home. I couldn’t decide what to make because it has been so muggy and hot here lately,  the last thing I wanted to do was turn the oven on. I also wanted to make him something unique from the usual cupcakes. My husband enjoys sweets, but they are not his favorite. I will make a batch and he will eat a cupcake or two and then guess who ends up eating the rest? Exactly. Not the best thing for trying to stay on my diet (avoid these 4 diet mistakes).

I thought about buying him an ice cream cake, but then I thought it would be more economical and better tasting (if you ask me,) if I made it myself. This pie is so easy that it literally took me all of 10 minutes to make.

Ice Cream Snickers Pie

1 pre-packaged Oreo Pie Crust or 1 package Oreos and 1/4 cup melted butter or margarine
1 jar (16 oz.) hot fudge
1 quart vanilla ice cream, softened (Blue Bell is our absolute fave.)
12 mini Snickers bars  (“fun size”)
Caramel sauce to drizzle (Here is a easy recipe for homemade caramel)

Warm hot fudge until softened. Pour over crust and spread evenly. Chop Snickers bars into small pieces and set aside a 1/4 of the Snickers to use as topping. Mix 3/4 of your chopped Snickers into your softened ice cream in a large bowl. Pour on top of the fudge layer. Top the ice cream with the Snickers you set aside and drizzle hot fudge and caramel on top.

Freeze for at least 4 hours before serving.

If you want to make your own Oreo crust, just crush the Oreo’s, mix with the melted butter and press into a 9″ pan, casserole dish or pie tin.
