Since we learned a little while back How Caffeine Has Been Proven to Boost Weight Loss, I decided, why not have some dessert and lose weight (read the latest groundbreaking research) at the same time? Seems logical to me anyway. This recipe is easy, delicious, and I will be doing my hips a favor by eating it. This is actually a low fat recipe and will be a perfect treat in the summer. It is only 150 calories per serving. Or 3 WW points.
2 envelopes (.25 oz. each) unflavored gelatin
2 cups cold strong brewed coffee or, espresso (if you want a really strong coffee taste.)
3 Tbl hot chocolate mix
1 container (6 oz.) low fat vanilla pudding, or low fat plain yogurt
1 container (8 oz.) frozen whipped topping
In a microwave safe bowl sprinkle gelatin over the 2 cups coffee and let sit for 2 min. Microwave for 2 minutes and stir until gelatin has completely dissolved. Stir in hot cocoa. Place bowl into ice water bath and let sit for 20 min, or until mixture is the consistency of sour cream. With an electric mixer, beat on high for 1 min.
Fold in yogurt or pudding and whipped topping.
Pipe mousse into serving bowls and top with whipped cream and chocolate curls if desired.
