These cupcakes are so pretty, so fun and so easy, why wouldn’t you make them? Anything with champagne in the ingredient list, (and my glass while I bake) has my seal of approval.
Ingredients:
For the cupcakes:
1 box white cake mix
a few drops red food coloring
champagne – to use in place of water for cake mix
For the frosting
8 oz shortening
1 lb powdered sugar
1 teaspoon vanilla
2 – 3 tablespoons milk
Candy Pearl Sprinkles
Directions:
Cook cake according to package instructions, replacing champagne for the water and adding a few drops of red food coloring to make cupcakes pink.
Let cupcakes cool and make frosting by adding shortening and powdered sugar to stand mixer. Mix on high with whisk attachment until blended. Add vanilla and milk and mix on high until light and fluffy.
Frost cupcakes and sprinkle candy pearls on top.
