When Girl Meets 30

Roasted Brussel Sprouts Recipe and the Health Benefits

February 16, 2011 By Erin Kennedy Leave a Comment

Oh, the little brussel sprout. How I love thee. One of my fave veggies. But it has to be done right. None of that boiled crap. I like mine roasted. It is more like a treat when I roast them.  Luckily for me they have some benefits to eating them.

There are Phytonutrients that are found in brussels sprouts that boost the body`s natural defense and immune systems to protect against cancer and other diseases. Brussels sprouts disarm cancer causing chemicals and encourage the body`s detoxification enzymes.

It has also shown in studies that brussels prevent cancer by promoting healthy DNA which is responsible for cell division in the body. When DNA is damaged, cells can multiply faster than normal and a cancerous tumor can form. Many studies have shown that the brussels can help protect your DNA from being damaged.

Other benefits:

  • High in fiber
  • Lowers cholesterol
  • Contains vitamin A & C
Good stuff to know, but now lets get to the good stuff.

Roasted Garlic Brussel Sprouts

Ingredients:
1/2 lb brussel sprouts
2 cloves garlic
1 tbl butter
salt and pepper

Preheat oven to 400 degrees F.

Cut off the ends of the Brussels sprouts and pull off any yellow outer leaves. Cut sprouts into smaller pieces. Place sprouts in a microwave safe bowl with an inch of water. Microwave until tender, about 1  min 30 sec. It will speed up the roasting time. Take sprouts out of water and into a baking dish with garlic, butter, salt and pepper. Bake for 15-20 min. Toss every five minutes. I like mine crispy so I roasted them a little longer.
