St. Patty’s Day is only a week away! I fell in love with these cupcakes and I think they would be so fun to make with your kids, or bring them to a party. You would be a hit if you brought these to your kid’s St. Patty’s party at school. They are so simple. I love that the most because spending my life in the kitchen is not my bag. So the fact that these are so easy to make, and so super cute and festive, I am in love, and salivating at the same time.
Damn you cupcakes! Why are you so good, and fool me into thinking it’s a special treat because I can devour my perfectly wrapped treat all on my own? Sharing?! That is for the dogs. Not sure where that saying came from. I can only imagine that the originator of that saying had a beef with a pack of dogs that used to harass he/she. But I digress, I love me some cupcakes. Now lets get to it!
Over the Rainbow Cupcakes
All you need for these little leprechaun fantasy cupcakes is a box of white cake mix, some food coloring, Airhead Extremes Sour Belts for the rainbows, Rolos or the pots of gold, sprinkles, and ingredients for the icing.
I would suggest making the batter, then scoop the batter into sandwich bags, add the food coloring, mix it up and then you can cut off the corner and pour into cupcake liners. That would be the easiest for cleanup and save yourself from washing a bunch of bowls that you mixed the food coloring in.
Layer the different color batters and bake. While you are baking you can make the icing.
Vanilla Butter Cream Icing
1/2 cup butter (room temp)
1 lb. powder sugar (about 4 cups)
3 TBS milk
2 tsp. Vanilla
Cream butter until light and fluffy. Add sugar 1 cup at a time mixing well. Add milk and vanilla. Then whip until it’s light and fluffy…really, keep whipping! Spoon frosting into a quart sized baggie, snip one corner of the bag and pipe the frosting in swirls on top of the cupcake.
