Sunday Brunch: Cinnamon Swirl Pancakes with Cream Cheese Glaze

My husband and I have been together for 5 1/2 years and for the first five years, we did not make pancakes once. Not sure why. I love pancakes. Then one night, I wanted to make something easy, comforting and delicious  I found a really great pancake recipe and we have been on a pancake kick ever since.

With our pancake kick, I have been experimenting with different flavors. This is one of my favorite recipes. I have included a cream cheese glaze that would be perfect on top of your cinnamon roll pancake, but I for one like to just get my calorie intake from butter. The cinnamon sugar swirl is enough sweetness for me, but by all means, I’m sure the cream cheese glaze is is heavenly.

Cinnamon Swirl Pancakes

Cinnamon Filling: 

  • 4 tablespoons unsalted butter, room temperature
  • 1/4 cup + 2 tablespoons packed light brown sugar
  • 1/2 tablespoon ground cinnamon

Cream Cheese Glaze:

  • 4 tablespoons (1/2 stick) unsalted butter
  • 2-ounces cream cheese, at room temperature
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Pancakes

  • 1 1/2 cups all-purpose flour 
  • 3 1/2 teaspoons baking powder 
  • 1 teaspoon salt 
  • 1 tablespoon white sugar 
  • 1 1/4 cups milk 
  • 1 egg 
  • 3 tablespoons butter, melted

Directions for pancakes
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.

Directions for cinnamon filling
Mix butter, cinnamon and sugar into a medium bowl. Scoop the filling into a quart sized plastic baggie. Once you are ready to use the filling, cut a small hole at the corner of the plastic baggie. Once the pancakes are on the griddle and you see them start to form bubbles, swirl the cinnamon filling onto the pancakes. Cook the pancake for another 2 minutes or until the bottom is golden brown, then flip with a large spatula.
** If you find your filling to thick to squeeze out, you can warm in the microwave for a few seconds. More than that and it will melt and become too melted to squeeze onto the pancakes.

Directions for glaze: 
 In a small saucepan  heat the butter over low heat until melted. Turn off the heat and whisk in the cream cheese until it is almost smooth. Sift the powdered sugar into the pan, stir and add in vanilla extract.
