This Sunday brunch I wanted to a little something different and offer some healthy brunch or breakfast options. Oh, those healthy breakfasts. Do we always eat it? Not usually. And it is the most important meal……blah, blah, blah. We have all heard it before. These are great because they can be easy to whip up for the week, or weekend and some are good for on the go, or to take to work. We need to eat it. In fact, studies have show that people who eat breakfast are 4.5 times less likely to be obese because they took some time to eat a healthy breakfast.
I am back on the wagon for my diet (avoid these 4 diet mistakes), so I will be referring to some of these tips for my brunch options. Especially the open egg sandwich above. It is really so good, and it doesn’t taste healthy.
Here are some healthy options from some diet (avoid these 4 diet mistakes)itians, and what they eat for breakfast.
Open Faced Arugula Egg Sandwich
The above picture is my favorite breakfast that I like to make when I have a few extra minutes. It’s just low calorie bread, arugula, tomato and a fried egg, with Pam spray, or a poached egg. It is only about 150 calories, depending on the bread you buy, Oh my gosh, it is so good, and so easy.
Omelet with Veggies
Mushrooms, spinach, tomatoes, avocados, onions. 2 egg whites and 1 whole egg. Add whole wheat piece of toast with I can’t believe it’s not butter spray, or margarine.
Toast and Yogurt
Whole Wheat toast with margarine. Dannon Light and Fit yogurt, (or my new fave, Activia light) 6 oz.orange juice and black coffee.
Oatmeal
Oatmeal sprinkled with ground flaxseeds and wheatgerm and cinnamon. Add some blueberries. Glass of skim milk or juice.
Smoothie
Banana and strawberry smoothie. Half of a whole wheat English muffin with sliced strawberries and honey.
Yogurt
Chobani nonfat plain yogurt topped with 2 Tbs walnuts. Raspberries and black coffee.
Waffles
Kashi Heart to Heart Honey Oat Waffles with fresh fruit and hot tea.
Breakfast Taco
Made with reduced-fat Cheddar and egg substitute is a satisfying and healthy breakfast option, especially if you use a corn tortilla.

Oatmeal cooked with apples a few raisins some cinnamon and a dash of vanilla is one of my favorite breakfasts. It keeps me full of hours.
