I had never made or had an egg in the hole before. But on a whim and with no other idea of what to make, I decided to try this out yesterday. As a blogger, I should always have my camera ready and taken some pics just because, you never know. But I didn’t. However, I did take a picture with my phone and I Instagram my meal because what else are you going to put on Instagram?
Needless to say, I thought this egg in a basket (what my husband keeps calling it,) was beyond delicious and so easy. My husband is a scrambled eggs kind of guy, so I wasn’t sure if he would be down for this, but he loved it.
So I decided with my not so pretty photo that I would share with you and make it my Sunday brunch feature. If you have never had this, I suggest that you make it asap.
Usually this recipe just calls for regular white bread, but I decided to branch out and use Italian loaf. I love to eat my runny eggs with sour dough, French bread or Italian loaf toasted, so for me, this was a no-brainer. It actually worked out better than anticipated.
Melt 2 tablespoons of butter in a pan. Cut a hole in your sliced bread and place the bread-hole and bread in the pan and rub around the butter so it soaks it up and turn it over. Do the same thing so both sides are soaked in the butter. Let it cook for just about 30 seconds on one side until a little browned and turn the bread over. Crack the egg in the middle and let cook until the egg whites are 3/4 of the way cooked. Turn over and let cook for about 30 seconds – 1 minute depending on how you like your yolks. I like mine runny so I only cooked about 30 – 45 seconds.
Now on to the bacon. This is the only way I make bacon and that is to bake it in the oven. Unfortunately I don’t have an “after” photo, but take it from me, baking it makes it so crispy and delicious. I foil my pans and place the bacon making sure there is space between each piece. I bake at 400 degrees for about 15 – 20 minutes. I really just eye ball it and remove once it reaches my desired crispiness. I like my bacon well done and crispy.
