Sunday Brunch: Kick-Ass Beergaritas

August 26, 2012 By Erin Kennedy Leave a Comment

Beergaritas for brunch? That’s right baby. Don’t judge me. Many things go for brunch, and in this house, beergaritas hit the spot for a hot, humid Sunday afternoon. These beergartias are the perfect accompaniment to Labor day weekend. Great way to end the summer with some beer and tequila. Why just have one liquor running through your veins. You gotta do it right!

I am a light-weight. I get pretty sick at pretty much anything that is not just beer or wine. The hangovers are just a bitch. But for some reason, when I drank a few of these puppies, I felt fine. Side note; I had a few saki bombs a couple of weeks ago and the same thing. I felt completely fine. So my conclusion is that beer is my shield for getting sick, and as long as it’s in the drink, I should feel fine. At least that is what I’m telling myself. Me + beer by itself = best friends, but now I know that it really has my back too. Brings a small tear to my eye.

So, without further ado, my new favorite recipe: Lime Beergaritas!

Serving: 1 Beergarita

Ingredients:
1 Beer (We used Miller light, but I think we should try any Mexican beer like Corona or lime beer like Budlight lime)
1 shot tequila
1 shot triple sec
1/2 shot Rose’s Sweetened Lime Juice
1 lime popsicle. Or if you want it sweeter, 1 Tablespoon frozen Limeade concentrate
Juice from 1 lime
ice

Directions:

Combine all ingredients together in a pitcher. You could put all of the ingredient in your glass, but it didn’t allow us to add much ice, and I need my drinks to have a lot of ice. So, we put all of the ingredients in a bowl and mixed. Also, we didn’t use Rose’s lime juice. I just put extra fresh lime juice, but I think that it was missing something, so I suggest using the Rose’s lime.

We also used lime popsicles. They were frozen, so I just cut it into pieces and added it to our ingredients. It melted pretty quick. If you are looking for a sweeter beergarita, try using the lime concentrate. You could also add a few pinches of sugar and mix.

Mix all your ingredients, pour over ice into your glass.

Cheers!
