This meal is so easy; it is for one of those nights that you have no idea what to make, and can only throw something together. This casserole is literally throwing everything into the dish and bake. This is one of my husband’s favorite recipes. I usually make it for him when I am going out of town because it heats up really well and freezes even better. So yeah, I make this huge portion, freeze half and leave the other half for the hubs to happily heat up over a few nights. This is one of those dishes that my husband requests as one of his faves.
I showed my brother these pictures while we were in New York. He said as soon as he got home he made it, and said it was so freaking good and he was happy to have the leftovers for a few days.
*** This dish is not for the faint of heart, or someone dieting, which is why I usually make this when I am going out of town. Too tempting!
Cheesy Tater-tot Casserole
1 bag (32 ounce size) frozen tater tots
1 Jimmy Dean Hot Sausage Roll (12 oz.)
2 Cups Shredded Cheddar Cheese
1 pint Heavy Cream
3/4 Cup Frozen Corn
1/2 tsp. Salt
1/2 tsp. Pepper
Red Pepper Flakes (optional)
Directions:
Pre-heat oven to 425 degrees. Brown the sausage in a skillet and set aside. Spray a 9×13 pan with Pam cooking spray. Add all ingredients, except for cream, to the dish. Pour heavy cream on top and make sure all ingredients are covered. Try to mix together so everything is covered in cream. Bake in the over for 60 – 75 minutes, or until the top is browned and the cream has fully baked into a solid casserole.

This would really satisfy my carb cravings…then…the scale would POP. Looks really good.

Oh yes Dr. Reginia! This is an absolute carb craving fix, however, yeah, there is a lot of fat. But it is sure good when the cream turns into cheesy goodness!
