Feeling good this week. I got a bomb-ass new juicer and it is amah-zing! I have had juicers before but this juicer is crazy good. It has totally given me the motivation to have a fresh glass of juice everyday. That helps me to want to stay on track. I have made a few recipes (see pics) and I am excited to get more fruits and vegetables to try out.
I am only down about another 1.5 lbs this week. It seems my body does not want to get rid of the Christmas smorgasbord weight. It wants to hold on to it or dear life. I am a little disappointed this week, I am trying to get the extra pounds off before I go to the Alt Summit conference this week! I am so excited, but I also know that a lot of those bloggers are super skinny and cute and have the best wardrobe. You know why? Because when you are skinny everything and anything looks good on you. I don’t feel like I have that luxury right now.
It gets worse – there is a white party and you have to wear all white, well when you don’t feel attractive or skinny, white is not exactly the most flattering color. I tried on some old spanx shorts and I sounded like an injured animal trying to pull them on. It took me about 5 minutes to pull them up and I was totally out of breath. Now, imagine tight spanx under a white outfit? Not too cute. However, I think it will look a lot better than wearing white on my thighs without spanx. White sure can exaggerate dimples like the grand canyon.
So, I am trying my best to find cute outfits, minimize my girth and remember to hold my head up high. I am proud of myself for stepping up and going to this major event, even if my confidence level is at a low. Hopefully these girls will try to find my sparkling personality and this isn’t a cliquey thing. I have never been to a conference before. So we will see. I will try to keep my points plus in line with the meals that are provided. I may have to focus on portion control. I will have my points calculator with me to try to do my best.
Ingredients for a delicious juice.
If you are from Utah, you know all too well about Cafe Rio. However, this salad is from Costa Vida. They have both here in AZ but I prefer the Vida because they offer a small salad which is about half the size of the regular sized salad. Again, portion control is what I am focusing on. If this salad looks like heaven to you, because it is, and you want to make it at home, here ya go. It is small flour tortilla, cilantro rice, black beans, lettuce, pico, scoop of guac, tortilla strips and meat. I either do not include meat, or I will add 3pts and add their chicken. This whole salad (small) is around 15pts. That does not include the dressing. I do their creamy dressing but I keep it on the side and dip my fork. SOOO damn good!
P.S. It was my birthday this week. That could have explain why my loss was not as much as I had wanted. I tried my best to keep on track during that day, and well……week. I was going to take a picture of the heavenly cupcakes that my husband surprised me with, but to be honest, taking a picture of them did not even cross my mind before my fork plunged deep into all 3 of them. Yes, only 3 because that is what I asked for so I don’t have a bunch of cupcakes lying around the house that end up being my morning breakfast. So sorry, no pic. I will try to prioritize next time, or did I already?
