When Girl Meets 30

What I Gave For Christmas This Year: Peanut Butter Candy Cookies

December 19, 2010 By Erin Kennedy Leave a Comment

This year has been financially tight for many people. That doesn’t change the fact that everyone wants to give good cheer and show appreciation for their friends and family. I decided it would be a great idea to whip up some peanut butter fluff bars to send to my Mom and MOH (mother-in-law) for Christmas.  Since we were a little low on cash I thought this was a genius and inexpensive idea. Fast forward four hours later, I finally finished and fell over on the couch in exhaustion, but for anyone else that is familiar in the kitchen it might take about an hour. (Please forgive the picture quality.)

Recipe:
1 roll store bought peanut butter cookie dough
(You can make your own cookie dough if you like, click here for recipe.)
8 oz softened cream cheese or you can substitute marshmallow fluff.
3 Tablespoons sugar
3-4 chopped up candy bars (Milky Way, Snickers, Butterfinger, M&M’s, anything you like.)

Line 8×8 pan with foil and spray with non-stick spray.
Line the pan with 1/2 inch thick peanut butter cookie dough.
Mix together the cream cheese and 3 tbl of sugar until softened and spread on top of cookie dough. Or spread about 5 oz. or half of a small jar of marshmallow fluff.
Spread the chopped candy bars on top of your cream.
Place the rest of the cookie dough on top. What worked best for me is to roll out the dough flat in smaller pieces and place side by side on top of the candy mix.
Bake in the oven at 350 degrees for 25-30 minutes.
Make sure it is completely cool before you cut into squares. Can make 9 large squares or 12 medium squares.

Enjoy!
