Mother’s Day Brunch with Breakfast Sweet Potato Hash

May 4, 2016 By Erin Kennedy 15 Comments

Mother’s day is almost here and do you know what you’re doing to spoil your mom? I have the perfect brunch that you can put together to celebrate your mom, or to celebrate yourself and your family on this important day. I made a Sweet Potato Hash that has bacon, kale, apple and caramelized onions with an egg. I made sure not to bake my egg too much, so it would still be runny, and create a yummy sauce.

Just a few details that I put together can create a nice morning. I served my breakfast hash, peach pie, cinnamon rolls, coffee, tea and of course both red and white wine. I went with Pinot Noir and Chardonnay. Both my mother and my favorite wines. Some beautiful flowers, a lace tablecloth that I found at a antique store and some cute tea cups and saucers.

Check out all the photos below to see my Mother’s day brunch. Here is the recipe for my Skillet Sweet Potato Breakfast Hash with Bacon, Apple & Caramelized Onions.IMG_2837IMG_2843IMG_2919

Yum! That looks amazing. I will have to show this to my hubby. Sadly my celebrating with my mom won’t be happening as she passed away years ago, but would love to do a brunch with my kiddos! This would be great!

I love everything about this, from the hydrangeas in the blue mason jars to the delicious meal. Brunch is one of my favorite meals and I am always trying to mix things up for breakfast for my boys, too.

Every year I fantasize about breakfast in bed for Mothers Day, It never really happens because I have a mom, my husband has a mom, I have a living grand mother and all of them seem to take precedence of my own mother hood. So I get up get the kids ready for church and go do what everyone else wants for Mother Day.

Brunch is more my style. I am not a morning person that can eat so this would be perfect.

That sounds absolutely delicious. I love using sweet potatoes whenever I can when I’m cooking. Definitely prefer sweet potato fries to regular fries so I’m going to have to give this a try sometime. Thank you for sharing!

Everything looks so lovely. I like brunch because it doesn’t interfere with morning church! I have to give the kiddos breakfast though, or they’re a restless mess by the time brunch rolls around. ;)

What a good looking breakfast, looks delicious as well as pretty! Not sure if we are going out for brunch or going out for cocktails. We may try brunch at our favorite local pub.

Sweet potato hash sounds like something delicious and new for me to try. I like the fact that this recipe incorporates bacon, kale and apples…oh and caramelized onions. However, I eat my eggs scrambled, and would probably use that as a substitute.
