Christmas Cinnamon Apple Raisin French Toast Casserole

Christmas is one week from today! Holy cow! This week SHOULD be for getting together the loose ends and finishing up. But really, that does not happen for most of us. I think 1/2 of my Christmas list is done, but knowing me I might end up at the store on Friday and Saturday. So, a nice Christmas casserole will be helpful that I can make it the night before and throw it into the oven while the gifts are being opened. Here is a good one.

Christmas Cinnamon Apple Raisin French Toast Casserole

Ingredients

  • 1 C. brown sugar
  • 1 tsp. ground cinnamon
  • 1/2 C. butter, melted
  • 3 apples, peeled, cored and sliced
  • 1/2 C. raisins
  • 1 1 lb. loaf French baguette, cut into 1 inch slices
  • 6 eggs, lightly beaten
  • 1 1/2 C. milk
  • 1 Tbs. vanilla extract
  • 2 tsp. ground cinnamon

Instructions

  1. Grease a 9x13 inch baking dish. In a large bowl, mix together brown sugar and 1 tsp. cinnamon. Mix in melted butter. Stir in apples and raisins until evenly coated. Pour into prepared pan. Arrange bread slices in an even layer over apples. In the bowl, whisk together eggs, milk, vanilla and 2 tsp. cinnamon. Pour over bread, making sure every slice is fully soaked. Cover with aluminum foil, and refrigerated overnight. Preheat oven to 375 degrees. Remove dish from refrigerator while the oven is heating. Bake covered for 40 minutes. Remove cover, and bake 5 minutes. Let stand 5 minutes before serving.

    You are right, these are the perfect things to make Christmas morning. I usually make cinnamon rolls the night before and then pop them in the oven in the morning. I just hate having to wash a ton of dishes before starting Christmas dinner. This is a smart way to go. Happy Holidays!

    What a fantastic recipe…I LOVE french toast…and this makes it so easy!
    If you have Italian Pannatone Bread (available this time of year in many stores), and you only need a couple of slices of french toast, you can slice from the loaf and make a small amount…DELISH!
