Sometimes I just have no desire to cook, especially when I’m not feeling well and I think I’m coming down with something. Just when I think I’ve made it out of the woods with spring around the corner, I can’t breathe out of nose and my throat is killing me.
Nothing sounds better than some warm comfort food. I got this recipe from my mother and it is so good you would never think that it is low-fat. I like it best in a tortilla, but it is delish over rice or just by itself.
Santa Fe Chicken Slow Cooker Recipe
Ingredients:
8 corn or flour tortillas
3 large chicken breasts
14.4 oz can diced tomatoes with mild green chilies (I like Rotel)
15 oz can black beans
8 oz frozen corn
1/4 cup chopped fresh cilantro
14.4 oz can fat free chicken broth
3 chopped scallions
2 diced garlic cloves
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
4-5 dashes of hot sauce
1 tbsp Cajun seasoning
salt to taste
Directions:
Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and cajun seasoning and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Makes 8 servings.
Each serving = 250 calories 2.5 grams of fat. 5 Weight Watchers Points (Does not include tortilla, depends on what kind you buy.)
